Fish Taco Madness

I love fish, with a capital L.O.V.E. My husband, however, does not so I don’t get to eat it at home very often. Today was one of those rare days, and let me tell you, I hooked it up. The girls were excited because they felt like they were eating at grandma’s. We always escape to grandma’s for some fish tacos. Today was my turn, fish tacos coming right up. They were soooooo good I had to take a few pictures and share.

Please don’t drool on your keyboard.

Wide Open Spaces…. On One Side

Every morning I drive my daughter to school down a road with new homes on one side and open space on the other. Every day the drive takes my breath away. I don’t know what it is, I just know that I love it.

Happy Birthday Angel

Ever since the birth of my youngest daughter life hasn’t been the same. I know I said something similar on my oldest daughter’s birthday post, but really, with the youngest one I really, really mean it.

It started a couple of weeks after she was born, the ambulance ride with her in my arms was the longest ride of my life. She stopped breathing and for a split second I was scared. I thought that was the last time I would hold her in my arms. Every time I tell the story I can’t help but choke up. It would be months before she was diagnosed with GERD with an intolerance for lactose milk, which caused her to choke every time she spit up. Yet here we are, three years later. It’s like her DNA is programmed to keep me on my toes. She’s a happy little thing with a temper like nobody’s business. She can be the biggest joy of my life one second and the biggest thorn on my side the next. I know that life with her will be interesting and I look forward to enjoying the ride. Happy birthday my love.

P.S. If you are a new parent or are going to be a parent soon, I recommend that you take a CPR class. You never think you’ll have a need for CPR until you need to save your child’s life.

Smoothie Magic

Finding ways to keep my kids happy, cool and full all at the same time can be a challenge in the summer. If it were up to them they would eat ice cream and popsicles all day, and I can’t say I blame them. A few natural ingredients and a Magic Bullet is all I need to make them a tasty treat. Really, if you don’t have a Magic Bullet you should really get one. It blends, chops purees and then some. ANYWAY… I get sidetracked when discussing my Magic Bullet. Need a healthy treat for your kids? Try this, absolutely delicious!

First Day of 1st Grade

Today wasn’t as difficult as her first day of Pre-K, that day I cried for 3 hours straight until it was time to go get her. It’s true that each year gets easier, but I think this time around she was more nervous than the first day of Kinder. Last night she was so excited to be meeting a new teacher and new friends that she could not fall asleep. She kept getting up to make sure I put all the random stuff in her backpack she wanted to take to school. She made sure about 5 times that I did not forget to put her lunch money in her new, glittery, pink wallet.

I got up really early this morning to get some things done before I had to get the girls up. Next thing I know, she’s standing in my room all dressed, backpack on, ready to tackle the day. I can only dream of this situation playing itself out the same way when she’s in high school. :)

I am wishing you an amazing first day of 1st grade. May you learn and grow and become everything your little heart desires.
